Week two has been one of hard work, amazing quality grapes and a lot of attention to detail. Up to date we have harvested 173 tons of grapes and all our Pinotage and Chardonnay is done for the season. This week will focus on the Shiraz for the Jess and started with Malbec as well as Sauvignon Blanc today. The biggest obstacle now is the logistics of bringing the Sauvignon Blanc into the cellar. We have to take about 15tons of Sauvignon Blanc in per day but the last truck has to leave our Elgin farm no later than 11am which is sure to create quite a few stressful situations. Sauvignon Blanc should be harvested as early as possible in the day to avoid the heat during mid-day which can have a negative effect on the grapes.
