The Classic is a 'Bordeaux style blend' showing finess and fruit. The wine is matured for at least 12 months in 225 liter French oak barrels, followed by 18 months in the bottle ahead of release.
The result is an elegant, food friendly, noble blend that is accessible upon release and with the capacity to improve and mature over the years.
Available in 1.5L, 750ml.
Simonsberg-Paarl
Complex nose of chocolate, blackcurrant and raspberry. Firm but elegant structure on the palate and a long finish.
The grapes were fermented in stainless steel and inderwent extended maceration. Only the free-run wine was used for the Classic.
The wine underwent malolactic fermentation, then carefully blended and matured for 12 months in 225L French oak barrels (25% new). Minimum fining followed and was bottled without any filtration. The wine was bottle matured for a further 18 months before release.
